Ingredients
16 oz elbow macaroni
4 tbsp unsalted butter
4 tbsp all-purpose flour
3 cups whole milk
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp dry mustard (optional)
3 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1 cup shredded gouda cheese
1/2 cup grated Parmesan cheese
1 cup panko breadcrumbs
2 tbsp melted butter
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes until slightly golden.
Slowly add the milk and heavy cream, whisking continuously to avoid lumps. Cook until the mixture thickens, about 3-4 minutes.
Stir in salt, black pepper, paprika, and dry mustard (if using).
Reduce heat to low and gradually mix in the shredded cheddar, mozzarella, and gouda cheese until melted and smooth.
Add the cooked macaroni to the cheese sauce and stir to coat evenly.
Pour the macaroni and cheese into the prepared baking dish. Sprinkle the Parmesan cheese evenly on top.
In a small bowl, combine panko breadcrumbs with melted butter. Sprinkle over the macaroni and cheese.
Bake for 20-25 minutes, or until the top is golden brown and crispy.
Remove from oven and let it cool for 5 minutes before serving. Enjoy!
Notes
For extra flavor, mix in cooked bacon, caramelized onions, or sautéed mushrooms before baking. You can also swap cheddar for a mix of gruyere and fontina for a gourmet touch.
