Ingredients

For the Soup:

4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream (or whole milk)

1 cup cheddar cheese, shredded

4 strips bacon, cooked and crumbled (optional)

2 tbsp butter

1 tsp salt (adjust to taste)

½ tsp black pepper

½ tsp paprika (optional)

2 green onions, chopped (for garnish)

Instructions

Sauté the Aromatics
In a large pot, melt butter over medium heat. Add chopped onions and garlic, and sauté for 3-4 minutes until fragrant.

Cook the Potatoes
Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are fork-tender.

Blend for Creaminess
Use an immersion blender to puree the soup until smooth. (For a chunkier texture, blend only half.)

Add the Dairy & Cheese
Stir in heavy cream, shredded cheddar cheese, salt, pepper, and paprika. Mix well and simmer for another 5 minutes.

Serve & Garnish
Ladle into bowls, top with crispy bacon, green onions, and extra cheese. Serve hot with your favorite pairing!

Notes

For a lighter version, use half-and-half instead of heavy cream.

Want a vegan option? Swap butter for olive oil, use vegetable broth, and replace dairy with coconut milk or cashew cream.

To make it extra thick, mix 1 tbsp cornstarch with a little cold water and stir into the soup.
